Chef Alex's Famous Chicken Salad Recipe

For many years now this Chicken Salad Recipe has by far been my family's FAVORITE! If you've ever attended one of our Seminars at the KCI Expo Center then you may have even had this! I begged Master Chef Bob for this recipe years and years ago and he so kindly shared!
This past week I made a batch and it disappeared just as quickly as I made it. I also made and took sandwiches and chips in to work to share with our staff and that quickly disappeared also.
Tonight Sophie BEGGED me to PLEASE make more! "Nobody makes it as good as you mom!" She needn't say another word!
With one batch of this recipe I can make 24 sandwiches using the large Sara Lee hamburger buns ... and that's not even being stingy with the helpings! Enjoy!
Chef Alex's Famous Chicken Salad Recipe
- 3 lbs. Cooked Chicken Breast (I use Chicken Tenders)
- 1/2 cup Diced Red Onion (I use the hole thing!)
- 1 cup Diced Celery
- 1/2 cup Drained Sweet Pickle Relish
- 3 cups Mayonnaise (I prefer a little less ... like 2 1/2 cups)
- 1 tbls Garlic Powder
- 1 tsp Dill
- 1 tsp Ground White Pepper
Combine, Chill & Enjoy! (makes approximately 24 sandwiches)
At our house we serve these FABULOUS sandwiches with chips, watermelon, a side salad and sweet tea! Perfect for family picnics!
This evening I whipped a batch of this up and divided it into two before adding the chicken. In half of the batch I added chicken and the other half I added chopped up hard boiled eggs {for my hubby}. Now every one in the house is happy.
